Ingredients
1/2 pint Blueberries
1/2 pint Raspberries
1/2 pint Blackberries
1/8 cup Grand Mariner
2 tablespoons Chopped mint
1/4 cup Sugar
Pancake
4 ounce Milk
2 Eggs
1/2 teaspoon Vanilla
2 tablespoons Granulated sugar
2.5 ounce Flour
1/8 teaspoon Salt
3 tablespoons Canola oil
Garnish
1 cup Whipped Cream
TT Powdered Sugar TT= To Taste
Directions
- Filling:
Combine the blueberries, raspberries, blackberries, grand mariner, mint and sugar in a bowl and mix thoroughly. Set aside for later use.
- Batter:
Combine the milk, eggs, vanilla extract and stir well. In another bowl mix together the sugar, flour and salt. Place the flour mixture into the egg mixture and stir well. Put the oil in an 8” sautee pan and place over high heat until the oil smokes. Place the batter into the sautee pan( Careful it may spatter ) and then put it into a 425 degree preheated oven. Bake for about 15minutes. The outside will be puffed up, dry and golden brown. Add the berry mixture to the center of the pancake. Garnish with the whipped cream and sprinkle the powdered sugar on top, serve. Enjoy!
