Fried Chicken

Ingredients

1 Whole Chicken (3-4 pounds ) cut into 8 pieces
2 cups Buttermilk
2 cups All Purpose Flour
2 tablespoons Garlic powder
2 tablespoons Onion powder
2 tablespoons Paprika
1 tablespoon Oregano, dry
1 tablespoon Black pepper
3 tablespoons Salt

Directions

Place the chicken into the buttermilk and let sit overnight or as long as possible.  Hold for later use.  Place the flour, garlic powder, onion powder, paprika, oregano, black pepper and salt into a medium size bowl and mix well.  Preheat your fryer to 275 degrees.  Take a piece of chicken from the buttermilk and place into the flavored flour and mix until the chicken is totally covered.  Dip the chicken back into the buttermilk then place again into the flavored flour until it is total covered this time patting off any excess flour.  Place the chicken onto a sheet pan and repeat the process until all of the chicken has been coated.  Carefully place the chicken into the 275 degree fry oil and cook for 15-18 minutes.  You may have to do this in batches depending on how big your fryer is.  If cooking in batches you can keep the chicken warm in a 250 degree preheated oven.  You can test the chicken by taking the temperature ( 165 degrees ) or by making a slight incision to see if the meat is cooked.  Place the cooked chicken onto absorbent paper towels and let sit for a few minutes.  Serve, Enjoy!
