Ingredients
5 pounds Pork 70% meat 30% fat
4 piece Poblano peppers roasted and skin removed
3 piece Jalapenos roasted and skin removed
5 piece Serrano peppers
3 bunches Cilantro stems removed
1.5 ounce Spinach powder
1 tablespoon Dry Oregano
1 tablespoon Dry Cumin powder
1 tablespoon Black pepper
3 tablespoons Minced garlic
1.5 ounce Salt
Directions
Place the poblanos, jalapenos, serrano peppers and cilantro and place in a blender and puree until smooth. Place the meat into a large bowl or mixer and add all ingredients. Mix until everything is fully incorporated. Cook of a small test piece to see if the seasonings are correct and adjust as necessary. Stuff the mixture into the prepared casings and twist every six inches. Cook as desired, enjoy
