Jamaican Beef Patties

Ingredients

Dough

3 cups All Purpose flour
1 teaspoon Salt
2 tablespoons Curry Powder
3/4 cup Cold water
1 cup Cold butter or Lard

Filling

2 tablespoons Oil
1 cup Onion small dice
1 tablespoon Jalapeno pepper, finely chopped ( More of you like it spicy! )
1.5 pounds Grounf beef
1/2 cup Beef stock or broth
1.5 teaspoons Salt
1 teaspoon Black pepper table grind
1.5 teaspoons Curry
1 teaspoon Dry thyme
1/2 teaspoon Allspice

Eggwash

3 Eggs
3 tablespoons Water

Directions

Filling Method: Place the oil into a sauce pan over medium heat and add the onion, jalapeno pepper, cook until the onions are translucent. Raise the heat to high and add in the beef and cook thoroughly. Strain off the fat then add the remaining ingredients and simmer for about 15 minutes or until the sauce is thick. Remove from heat and let cool.

Dough Method: Place the flour, salt, curry powder and cold water in a food processor, pulse to combine. Add the butter or lard and pulse until the dough forms a ball. Do not over mix. Remove dough from processor and cover with plastic wrap and let rest at least 30 minutes.

Egg Wash Method:
Mix well, hold for service.

Service: Preheat the oven to 400 degrees. Roll out the dough to 1/8th inch thick. Cut into 8, 6” rounds. Place the filling onto ½ of the patty and brush the edges with your eggwash. Fold the patties in half the crimp with a fork. Brush the tops with eggwash and place in the oven for about 20-25 minutes. Serve and enjoy.
