Ingredients
1 tablespoon Oil
1/2 cup Chorizo sausage cut into bite size pieces
2 clove Garlic thinly sliced
4 cups Mussels clean and debeard
1/4 cup Tequila
1/2 cup Cherry tomatoes sliced in half
1/4 cup Red onions fine dice
1 teaspoon Lime zest
2 tablespoons Cilantro finely chopped
1 tablespoon Serrano pepper finely chopped
1 tablespoon Lime juice
Directions
Place your oil into a sautee pan and place over medium heat. Add in the chorizo and garlic and cook until you lightly caramelize the chorizo. Add the mussels then the tequila and cover for about two minutes. Watch out for the flames! Add in the tomatoes, onions, lime zest, cilantro and Serrano pepper and cover for about 2-3 minutes or until the mussels are open. Remove from heat and add the lime juice and season to taste with salt and pepper. Place in a warm bowl and serve. Enjoy!
