Panini: Prosciutto with Smoked Mozzarella fresh Basil and Plum Tomatoes

Ingredients

2 piece Foccacia sliced in half
4 tablespoons EVOO Extra Virgin Olive Oil
8 slice Prosciutto thinly sliced
2 Plum Tomatoes
8 leaves Fresh Basil
TT Salt and Pepper TT= To Taste
8 ounce Smoked Mozzarella sliced thin

Directions

Preheat Panini grill to medium high heat.  Open the foccacia so that the inside to the top and bottom are facing up.  Drizzle up to 2Tablespoons of Extra Virgin Olive Oil  per sandwich.  Layer prosciutto, mozzarella, tomatoes, and basil over bottom of bread.  Season with salt and pepper.  Place the tops on the sandwiches.  Place in the Panini grill and toast until the cheese is melted.  Cut the Panini in half and serve with chips. Enjoy! If you don’t have a Panini grill preheat your oven to 350 degrees.  Place the sandwich on a sheet pan and heat until the cheese is melted.
