Ingredients
2 tablespoons Balsamic Vinegar
6 tablespoons Extra virgin olive oil
1 tablespoon Shallots Finely chopped
1 teaspoon Garlic Finely chopped
1/4 teaspoon Thyme Finely chopped
TT Salt and Pepper TT= To Taste
8oz Ball Smoked Fresh Mozzarella sliced in 1/4 inch rounds
1 large Ripe Tomato sliced in 1/4 inch rounds
1 Basil Flower Garnish
TT Salt and Pepper TT= To Taste
Directions
- Balsamic Vinaigrette
Place the Balsamic vinegar, Extra Virgin Olive Oil, Shallots, garlic, thyme into a small bowl and mix well. Season To Taste with Salt and Pepper then set it aside for later use. It is best to do this in advance as it gets better with time.
- To Assemble
Alternate slices of the fresh smoked mozzarella cheese and tomato forming a circle. I normally use about five slices of each. Place basil flower on top. Pour some of the balsamic vinaigrette on the mozzarella cheese and tomatoes. Season with salt and pepper then serve. Enjoy!
- In this recipe I use smoked mozzarella and a Balsamic vinaigrette. You can keep it more traditional by using fresh mozzarella and oil and red wine vinegar.
