Ingredients
6 quarts Popcorn popped
8 ounce Butter 2 sticks
2 cups Sugar
1/2 cup Light corn syrup
1/2 teaspoon Baking soda
1 teaspoon Vanilla extract
Optional
1 1/2 cups Dry roasted peanuts

Method:
Place popcorn in a large bowl that will give you plenty of room to mix it up. You may have to use two bowls for this. Melt the butter in your sauce pan then add the sugar and corn syrup. Place over medium high heat and stir until golden brown, approximately 5 minutes. Remove from heat and stir in the vanilla and baking soda. Pour over the popcorn and stir in until fully coated. Place on a non stick surface, spread it out and let it cool. Once cool break it up into pieces and it’s ready to serve. Enjoy!
Peanut Note: If you are using the peanuts add them into the popcorn before you add the caramel sauce and follow the recipe.
Chefs note: I have to admit most of the time we have popcorn in the family household we use microwave popcorn. Feel free to use any popcorn you like but I used Pop Secrets Homestyle. I love the butter and salt taste of it! I found that one 3.2oz bag will yield about 3 quarts of popcorn so we used two for this recipe.
