3 cups Sweetened coconut
1 1/8 cups Sugar
3-4 Egg whites
1 tablespoon Cornsyrup
1 teaspoon Vanilla extract

Directions:
Preheat oven to 400 degrees and line 2 sheet pans with parchment paper. Place the coconut, sugar, 3 egg whites, and corn syrup in a double boiler, over medium heat, and mix until it forms a smooth paste. You may need to use the 4th egg white to get this. Let the filling cool enough to handle then place in a pastry bag with a large star tip and pipe out 12 cookies per sheet pan. If you don’t have a piping bag you can just place then on the sheet pan using a spoon. Place in the oven until firm or the edges are golden brown. Remove from oven and place on your cooling rack. Serve, enjoy!
