Ingredients
3 pounds Russet potatoes, medium dice about 12 cups
1 pound Bacon
1 cup Mayonnaise
1 cup Sour cream
2 cups Blue cheese crumbled
1 teaspoon Lemon juice
1/2 teaspoon Worcestershire sauce
TT Salt and Pepper TT= To Taste
1 bunch Green onions thinly sliced
Directions
- Place the potatoes into a 250 degree deep fryer and cook until soft ( about 5 minutes ) Do not get any color on them at this point. Hold for service. Place your bacon slices onto a sheet pan and bake in a 350 degree oven until the bacon is crispy. Remove from the oven and drain off the bacon fat and hold. When the bacon is cool chop up into small pieces and hold for service.
- Dressing: Place the mayonnaise, sour cream, one cup of blue cheese, lemon juice and Worcestershire sauce into a medium bowl and mix until smooth. Add in the bacon fat and the second cup of blue cheese and stir just until mixed in. Season To Taste with salt and pepper, hold for service. Thinly slice one bunch of green onions and hold for service. All of the items up to this point can be done up to two days in advance.
- Service: Place the potatoes into a 350 degree deep fryer and cook until golden brown and crispy. Remove from the fryer and place into a medium bowl with paper towels and toss with salt and pepper. Place the blue dressing, crispy bacon and green onions into a medium size bowl, add the potatoes to the blue cheese dressing and mix until everything is mixed evenly. Serve, Enjoy!
