Dirty Rice

Ingredients

1/2 teaspoon Cayenne pepper
1 1/2 teaspoons Salt
1 1/2 teaspoons Black pepper ground
1 1/2 teaspoons Paprika
1/2 teaspoon Dry mustard
1 teaspoon Cumin
1/2 teaspoon Thyme dry
1/2 teaspoon Oregano dry
2 Bay Leaves
2 tablespoons Oil
2 clove Garlic thinly sliced
4 ounce Chicken gizzards chopped
4 ounce Ground pork
1/2 cup Onions small dice
1/2 cup Red peppers small dice
1 cup Converted rice
2 cups Chicken stock

Directions

Place the cayenne, salt, black pepper, paprika, dry mustard, cumin, thyme, oregano and bay leaves into a small bowl and set aside.    Place a small sauce pan over medium heat  and add the garlic.  Cook until very fragrant.  Add the chicken gizzards and ground pork to the pot and increase the heat to high.  Cook the meat while stirring constantly until it has some color on it.  Reduce the heat to medium and add the onions and peppers.  Cook until the onions turn translucent then add the seasoning mixture, rice and chicken stock.  Raise the heat to high giving it a quick stir to make sure everything is mixed in well.  Once it boils reduce the heat to a simmer and let cook for about twenty minutes or until the rice is cooked then serve.  Enjoy!
