Ingredients
3/4 cup All Purpose Flour
1/4 cup Corn Starch
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Beer of choice
1 pound Fresh Cod
1/4 cup All Purpose Flour for coating fish
8 ounce French Fries ( Chips )
TT Salt for fries
1 Lemon Cut into slices
2 sprigs Parsley for garnish
Directions
- Batter
Place the flour, corn starch, salt and pepper into a medium size bowl. Slowly pour the beer in while whisking until you have a batter a little thinner than pancake batter. You may not need all of the beer to get this consistency, set aside for later use.
- Fish
Preheat your cooking oil to 325 degrees. Cut your fish into two even pieces. Place into a medium bowl and add ¼ C All Purpose Flour. Flip the fish over ensuring that you have an even coat of flour on them, then pat them lightly to remove excess flour. Place the fish into the batter ensuring that you have an even coat all around. Fry for about six minutes. You may have to flip the fish over half way through so it gets golden brown on both sides. Place on a sheet pan with paper towels to absorb excess oil. Discard paper towels and place the sheet pan with the fish into a warm oven to keep warn while cooking fries. Cook the fries until golden brown. Remove from the fryer and place on a sheet pan with paper towels to absorb the excess oil. Season To Taste with salt.
- Plating
Place one piece of fish onto each plate. Divide the fries (Chips ) between the two plates. Garnish with lemon wedges and parsley then serve. Enjoy!
