Ingredients
3 tablespoons Extra virgin olive oil
3 clove Garlic thinly sliced
1 Chicken breast grilled ( about 6 oz ) cut into bite size pieces
1 cup Roma Tomatoes cut into bite size pieces
5 piece Zucchini grilled ( 1/4 inch ) cut in half
5 piece Yellow squash grilled ( 1/4 inch )
2 cups Cooked linguine warm
1/4 cup Black olives oil cured
1/4 cup Feta cheese crumbled
6 large Basil leaves thinly sliced
TT Salt and Pepper TT= To Taste
Directions
Place the Olive oil into a large sauté pan and put over medium heat. When the olive oil is warm add in the garlic and lightly cook until you can smell the aroma. Add the chicken and stir, warming it up. Raise the heat to high. Add the tomatoes, zucchini and yellow squash stirring until they are warmed through. Add the cooked linguine then the olives, crumbled feta and ½ of the basil and mix thoroughly. Note: if the pasta begins to dry out you may need to add a little water here. Season To Taste with salt and pepper. Divide the pasta into two pasta bowls. Garnish with the remaining basil and serve. Enjoy!
