New England Lobster Roll

Ingredients

Coleslaw

2 cups Green cabbage thinly sliced
1/2 cup Reb cabbage thinly sliced
1/2 cup Carrots thinly sliced, julienne
1/4 cup Mayonnaise
1 tablespoon White wine vinegar
1/8 teaspoon Celery seed
1/4 teaspoon Salt
1/8 teaspoon Black pepper

Lobster Roll

2 Frankfurter rolls buttered and toasted
2 Lobsters about 1 1/4 pound each
4 tablespoons Butter
As Needed Water

Garnish

2 Lemon wedges
French Fries Hot

Directions

  • Directions Coleslaw: Place all ingredients into a bowl and mix until fully incorporated.  Set aside for later use
  • Directions Lobster Roll: In a pan large enough to hold two lobsters add two inches of cold water.  Bring the water up to a boil then drop the lobsters in.  Cook for about 6-8 minutes covered.  Remove from the water and place them in an ice water bath to cool down.  Remove the meat from the lobsters.  In a small sauce pan melt the butter over medium heat, add the lobster.  Heat until the lobster is warn and is coated with butter
  • Plating: Divide the lobster meat between the two toasted frankfurter rolls the place one on each plate.  Divide the coleslaw between the two plates.  Serve with hot french fries and a wedge of lemon.  Enjoy!
