Ingredients
1 pound Baby Red Potatoes Cut into 1/4s
1 tablespoon Salt
Water To cover potatoes by one inch
1/4 cup Olive Oil
2 tablespoons Garlic Chopped
1.5 tablespoons Rosemary Chopped
1 teaspoon Salt
1/2 teaspoon Black pepper Ground
Directions
Place the potatoes into a sauce pan and cover them with water. The water should be one inch above the potatoes. Place over high heat until the water boils then drop to a simmer for ten minutes. Remove from heat and strain off the water and place on a sheet pan. Mix the olive oil, chopped garlic, rosemary, salt and pepper into a medium size bowl and stir well. Add the potatoes and toss until they are covered with the oil mixture. Place them onto a sheet pan so they are evenly spread out then put them into a 400 degree preheated oven. Cook until golden brown about fifteen to twenty minutes. You will have to move them around once or twice during that time to ensure even brownness. Once the proper color is achieved remove from oven and serve. Enjoy!
