Ingredients
32 ounce Masa mixta instant corn flour
20 ounce Oil
44 ounce Water
2 tablespoons Salt
1 teaspoon Salt
Directions
Yield about 6 pounds
Place all ingredients into your kitchen aid with the paddle attachment and put on medium speed for about 5 minutes. The dough will be done when it is smooth and won’t stick to your hands. The dough is now ready for use.
Ingredient thoughts:
I used Masa mixta instant corn flour for the tamales but I’m sure you could use any instant tamale flour.
Fat: You can use lard, shortening or oil for this all within the same weight. I used oil for this with a twist. You have to bring it up to 350 degrees first to get the proper taste. I use this because oil has a longer shelf life and the lard tends to go bad quicker.
Liquid: For this recipe I used water but feel free to use other liquids. A lot of the time I will use the cooking liquid from the meat as additional flavorings in the masa.
Salt: You will notice that the dough seems a little salty but don’t worry, when you steam them you will lose some of that.
