Ingredients
2 tablespoons Oil
1 pound Tomatoes cut into 1/4ers
1 cup Onions small dice
1 Jalapeno pepper roasted small dice
2 Toasted Tortillas
2 cups Chicken stock
TT Salt and Pepper TT= To Taste
Garnish
2 Tortillas thinly sliced and fried
4 tablespoons Cotija or parmesan cheese
20 slice Avocado
4 tablespoons Sour cream
4 sprigs Cilantro
Directions
Place the oil into a medium size sauce pan and put it over high heat. Add the tomatoes and onions and cook until you have some color on them. Add the jalapeno pepper and cook for about two more minutes. Add the toasted tortillas and chicken stock, bring to a boil and the simmer for about 20 minutes. Remove from heat and place in a blender. Blend until the mixture is smooth. Put back over medium heat and season with salt and pepper. Divide the soup into four hot soup bowls and garnish with fried tortillas, cotija or parmesan cheese, avocado, sour cream and a spigs of cilantro. Serve, Enjoy!
