Chinese Steamed Buns

Ingredients

Dough

2 teaspoons Active Dry Yeast
4 tablespoons Sugar
4 cups All Purpose Flour
1 1/4 cups Warm Water

Filling

1 tablespoon Oil
3 clove Garlic
1 Scallion thinly sliced
2 teaspoons Soy Sauce
2 teaspoons Dry Sherry
1 tablespoon Oyster sauce
1 tablespoon Sugar
1/2 cup Water
8 ounce Roasted Red Pork small dice
1.5 tablespoons Slurry 2t cornstarch in 1 T water

Directions

Dough:
Place the yeast, sugar and flour into a bowl and mix well. Slowly add the water and knead until it forms a firm dough. Place in a medium size oiled bowl and let rise until doubled in size.

Filling:
Heat your oil in a sautee pan then add the garlic and scallion until aromatic. Add in the soy sauce, sherry, oyster sauce and sugar and mix well. Pour the water into the mixture and bring to a boil then add the pork and warm through. Thicken with the slurry and let cool.

Service:
Roll the dough out into a 1” thick log then cut into 1” pieces. Form each piece into a three inch circle using a rolling pin and place the filling into the center. Bring up the sides of the dough, pleat and pinch the edges together to seal tightly. Place in a steamer and steam for 12-15 minutes. Serve, Enjoy!

Chefs Note: You can also freeze these for later use.
