Servings

Ingredients

10 ounce Water
19 ounce Bread flour
3 tablespoons Sugar
1 teaspoon Salt
2 tablespoons Oil
1 tablespoon Instant yeast

Water for boiling

4 quarts Boiling water

Everything topping

2 tablespoons Sesame seeds
2 tablespoons Poppy seeds
1 tablespoon Dry minced garlic
1 tablespoon Dry minced onions
1 teaspoon Kosher salt

Directions

1. Combine water, flour, sugar, salt, oil, and yeast in the mixing bowl. Mix on low speed using the dough hook until well-developed, about 6- 7 minutes. Place it in a medium bowl, cover with plastic wrap and let it rest overnight.
2. Place the dough on a lightly floured work surface, and divide the dough into 6 equal pieces. Roll each piece of dough into a cylinder shape about 8 inches long. Join the ends to form a circle and roll until they are combined. Repeat with the remaining dough. Place on a parchment paper lined sheet pan.
3. Preheat oven to 475 degrees F. Bring 4 quarts water to a boil in a large pot. Boil the bagels, three at a time, until they rise to the surface of the pot, about 1 minute per side. Remove the bagels with a slotted spoon and place them on the parchment lined baking sheet .

4. Dip the tops of the wet bagels into the toppings if desired and arrange them, toppings up, on the baking sheet. Bake in the preheated oven until the bagels begin to brown, 15 to 20 minutes. Remove from oven and Enjoy!
