Ingredients

2 cups All purpose flour
1/8 teaspoon Salt
1/4 teaspoon baking powder
2 tablespoons Butter or Ghee
1/2 cup Water more may be needed

Filling

2 tablespoons Oil
1 cup Onions small dice
1 Jalapeno pepper finely chopped
1/4 teaspoon Cayenne powder more can be added if you like it hot
12 ounce Potatoes roughly mashed
2 tablespoons Cilantro finely copped
1 teaspoon Cumin seeds
1/4 teaspoon Salt
1t Garam Masala

Directions

  • Dough: Mix the flour, salt, baking powder and butter.  Add the water and knead the dough until it is soft and smooth. ( You may need additional water to make this happen ) Form the dough into a ball and cover with plastic wrap and put aside for later use.
  • Filling Method:

Heat oil then add onions and jalapeno pepper.  Cook until onions are light brown.  Remove from the pan and place into a medium size bowl.  Add potatoes then the remaining filling ingredients and mix well.

  • Assemble:

Roll the dough out into a log shape and divide dough into 8 equal size pieces.  Roll them out one at a time into a circle ( approximately 6” ) you may need additional flour for dusting.  Cut the circle in half and roll it into a cone with the seem facing you.  Pinch this seem to ensure it is sealed.  You can use water to help with this.  Fill the cone with the filling leaving enough room to seal the top.  Seal the top like the center seem.  Place into 350 degree preheated oil and cook until light brown.  Remove from the oil and put aside until ready for service.  This can be done several hours in advance.

  • Service: Place the samosa into the 350 degree preheated oil and cook until golden brown.  ( The second time cooking will help it stay crispy )

Serve with your favorite chutney.  Enjoy!
