Split Pea Soup

Ingredients

5 slice Bacon, Raw thinly sliced
1 cup Onions Finely chopped
1 cup Celery Finely chopped
4 clove Garlic Finely chopped
16 ounce Split peas Rinsed and remove foreign objects
8 cups Chicken stock or broth
TT Salt and Pepper TT= To Taste
6 tablespoons Sour cream
8 slice Boiled ham thinly sliced and seared
2 tablespoons Chopped parsley

Directions

Place the bacon in a sauce pan and put over medium heat.  Cook until you have rendered the fat off of the bacon about five minutes.  Do not brown the bacon.  Add in the onions, celery and garlic and stir until the onions are translucent.  Add in the peas and stir in, then add the chicken stock.  Bring the heat to a boil then drop down to a simmer and let cook for about ninety minutes or until the peas become soft.  Puree the mixture until smooth. You may need to add additional stock or water to get the proper thickness. Adjust the seasonings with salt and pepper, place into warm bowls and garnish with sour cream, ham and parsley.  Enjoy!
