Ingredients
2 tablespoons Sugar
1 tablespoon Water
1 clove Garlic finely chopped
1/2 cup Boiling water
3 tablespoons Fish sauce
10 ounce Catfish
1 Scallion thinly sliced
4 sprigs Cilantro
1 pinch Ground black pepper
Directions
Place the sugar and one tablespoon of water into the clay pot or sauce pan and put over high heat until the sugar carmelizes. Add the catfish and sear the fish with the hot carmel. Add in garlic and cook until aromatic. Add in water and fish sauce. Bring to a simmer until fish is almost cooked, approximately five minutes. Reduce the sauce until it is thick, approximately 2-3 minutes. Garnish with your thinly sliced scallion, cilantro and black pepper. Serve with white rice.
