New London Whaler’s Cafe Chef Tomm came to Good Morning Connecticut Sunday to cook up some delicious Bruschetta.
Chef Tomm launched a program at New London High School. Student’s are able to create dishes that are then brought into restaurants and supermarkets. All the money raised helps run the program. Students will be working through a program soon with Mohegan sun!
The recipe for the Bruschetta is as follows:
Bruschetta
Serves 3-5
Tomato mixture
2C Tomatoes cut small dice about 4 romas
2T Basil leaves finely chopped
1.5t Garlic finely chopped
2T Tuscan Herb Extra Virgin Olive Oil from the Olive Bar
2T Balsamic vinegar
1/2t Salt
1/4t Pepper
Bread
15pcs Baugette cut ¼” thick
¼ Extra Virgin Olive Oil
2 cloves garlic
Garnish
15 slices Parmesan cheese
2T Basil leaves finely chopped

Mix all of the ingredients for the tomato mixture and let sit for about thirty minutes. Lightly brush the 15 slices of baguette then place onto the grill to get some color on them. Make sure you get both sides. Remove them from the heat and rub the clove of garlic on it to give it a little garlic flavor. Put a generous amount of the tomato mixture on each piece of bread then garnish with the parmesan cheese, chopped parsley, serve immediately. Enjoy!
