Rustic sausage and bell pepper penne in a red sauce

Ingredients

2 tablespoons Olive Oil
3 clove Shallots thinly sliced
3 clove Garlic thinly sliced
1 pound Sweet Italian Sausage cut into bite size pieces
8 ounce Baby Bella Mushrooms also known as Crimini mushrooms sliced into 1/4
3 Roma Tomatoes
1 Green Bell Pepper cut into bite size pieces
24 ounce Pasta Sauce ( Your favorite Brand )
TT Kosher Salt TT= To Taste
1 pound Penne pasta uncooked

Directions

Heat one gallon of water to cook one pound of penne pasta.  In a large sautee pan add the olive oil and put over medium heat.  Add in the shallots and garlic and cook for about two minutes.  Raise the heat to high, add the sausage, mushrooms and cook through about seven minutes.  Drop the heat to medium and add the tomatoes and bell peppers.  Add the tomato sauce to the mixture and let simmer while we cook the pasta.  Place enough salt into the pasta water so it tastes like the sea.  When the water is boiling add in the pasta and cook as directed on penne pasta box.  Once the pasta is al dente strain then return to the same pot.  Add the sauce and place over medium heat stirring until the sauce is thoroughly mixed in.  Serve, Enjoy!
